** So disappointing to not find anything that tastes good. Everything is make-shift and doesn’t taste good. Please just give me some good pre-made food!

Got a little upset today. There has been a lot going on with work and my diet. I didn’t realize I was having problems with my diet until I started crying about it, or maybe it was also part of everything else. I got upset because I was tired of having to cook everything all of the time. At no point can I take a break from it and grab some Subway or order in. I get home from a busy day and it’s past dinner, then I still have to cook dinner. Yes, I am positive about my new healthy and trust me, I love it! But sometimes it just gets to you not being able to just take a break from it. One day I’ll get there. I’ll be able to do my yoga, cook and be at work on time. One day … one day.

03/10/2015

** Smoothie: chocolate almond milk, chia seeds, oats, banana, honey, peanut butter, hemp protein and ice.

** Love whole Foods, the environment, the people, such a joy just to shop here. Costs me an arm and a leg today, but I stalked up on some of my favourite sauces that I can’t get at Herb and Spice. I always say, “When you find a product you love, buy 3 or one in every colour”. So I did!

*I’ve been working on not wasting any of my fruits and veggies. Key word: working on. I don’t eat what I’m not in the mood for and to be honest I’m never in the mood for broccoli or cauliflower. But I continue to buy it because I know it’s good for me. I work on making it part of my meals, but sometimes it just doesn’t get in there on time. My diet and my cooking will always be a work in progress and that’s completely okay. I can never know everything or be perfect with my waste, but the continued effort is what matters the most. Never give up on your journeys or experiments, we are scholars of life. Enjoy the journey!

*** This might be a little Too much information, so if you don’t want to know skip to tomorrow. I’ve been really bloated and gassy lately, but I’ve been eating the same stuff I have this whole time. It’s been very apparent this past week mainly. I think it might be the bananas in my smoothie. But I feel like the banana’s are an important part to my smoothies and they’re really good for you! I have started taking enzymes with my dinner as well, hoping that might help a little bit with breaking down everything. Went to yoga the other day, it’s been the first time in months. Too long, I just have no motivation. I know it’s important to do though. Healthy eating is part of a balance with exercise (body movement) as well.

03/23/2015
*** I didn’t write anything yesterday. I think I’m tired of writing everything I eat. I believe the reason I started has been successful in getting me to where I am today. I will continue on this journey of my ‘New Healthy’ and keeping you posted. I will be trying new recipes and letting you know how that goes too. I would appreciate any feedback you may have in regards to what you might like to see or know. If you or someone you know has experiences with this or are going through this, feel free to share. Thank you for sharing this journey with me xo.

Love Always,
RCarr

**Went shopping today at herb and spice as well as whole foods. Got a lot of stuff in bulk at herb and spice to have the ingredients when I need them. I spent just under $300 on everything, but I know that bulk and buying ingredients is expensive. I feel bad when I waste any food thought because of how expensive everything is and the people who don’t have food, I need to work on using everything before it goes bad.  I’ve written everything in my fridge on a whiteboard, so that I can make sure to erase everything before it goes bad. I’ve got to try different things to figure out what will work and what doesn’t to make less waste. Everything is ready for my smoothie journey and I am very much looking forward to it. I have hemp hearts, chia seeds, frozen fruits, almond milk, matcha, wheat grass powder and most important of all a food processor/blender!

**Smoothie journey started yesterday and I’m super stoked about it! Got all my ingredients and machinery needed as well, I’m super pre-pared as per usual! First one wasn’t the best, but I can only get better. This morning’s smoothie was delicious, but who can screw up peanut better and chocolate? One thing I like about the smoothies is how you can pack it with a lot of nutrients you wouldn’t normally get or may have missed. Just blend them up with delicious things and you’re good to go! I also can’t wait to try my hand at making my own bread as well.

** I find it’s getting easier and I’m getting more excited trying new things and experimenting. The other day I made energy bites and tonight I’m making muffins. I feel like I’m making more effort with new things and this ‘new healthy’ then I did with my regular diet. In regards to eating things at home anyways. I haven’t been eating out at all, I’m a little nervous after I became more conscious/ aware. I’m not gonna lie, I’m kinda scared to ask about things, I feel like if I do I’ll be grossed out or not be able to eat anything, period. As for resources, I’ve found pinterest to be very helpful with recipes, measurement substitutions/ replacements, things to look out for and advice for groceries. It’s pretty costly if you’re doing everything ‘properly’. Like ensuring you get the right amount of nutrients and vitamins. But I cannot re-iterate how good I feel and how it feels to eat organic and healthier then I was. Mind you I didn’t eat bad, but you can always eat better.

RCarr

02/17/2015

*** It’s almost been a month on the ‘new healthy’ and I feel great! Other than the endoscopy stuff I have only gotten sick once. I am getting used to the whole “lack of convenience” thing. It’s nice to know my food is healthy, I know how it’s cooked and what it’s cooked with. I am testing a bit of my boundaries like with white vinegar, glucose, things like that. I will not give up my pickles! I’m realizing this it might just be things that are obvious wheat and gluten, like bread, etc. It’s a bit scary testing the limits but I prefer to know because I would like to not give up EVERYTHING, if I don’t have to.

** Went to whole foods today for my first time here in Ottawa, it was HUGE! And it was so lovely all the local and organic foods. I even saw the mayor there. I really didn’t realize how good it would feel to simply buy food. Knowing what I’m eating and where it’s coming from. I used to be so resistant to organic foods mainly because of the price and the fad of it all. Yes, it’s expensive. But man is it worth it, it feels so good! I brought my book a long to maybe get food and read or have coffee. But all I wanted was to get home with my groceries and get cooking. It’s a joy to cook and to know everything that you are eating. Any additives are to your own accord, butter, spices, so simple.

Sometimes I don’t get to it till just before bed or even the next day. I haven’t missed a day and I always get it done. I bought things to make cabbage rolls and such. Going to try and start making things outside of my usual. Looking forward to discovering new and delicious things.

** Another challenge with the new diet change is trying to come up with different things to eat. I don’t know about other people but I tend to get used to certain foods and just eat those specific ones all the time. This GF thing is based mostly on fruit, veggies and rice. Keeping that new and interesting while living alone and working a lot can prove to be rather difficult. I would also describe my diet ( the vegetarian part) as a meat eater with out the meat. So I don’t replace with tofu lentils, kale, or things like that, I know I should be, it’s just I’m really not a fan of some of the funky veggie dishes. I hope that I can get out of my shell a bit more with this food and try new recipes. Eating the same things all the time gets old fast.

New Healthy ~ 01/27 – 01/31/2015

Standard

These are entries from 01/27-01/31. This is during the time where I was going through preparing for my endoscopy procedure and the time after.

01/27/2015

** Went for my endoscopy consultation today. All I want to do is cry. Mind you, I’m happy and grateful to be in so quick and for him wanting to help me. But at the same time I am going to be sick until Monday. I have to load my body with wheat and gluten for the procedure. I bought a bagel when I got out of the office and tears were welling while eating it. I’m putting food in my mouth that I know gives me nothing but pain. Soon I will have answers, soon I will know how/what to eat, soon I will be better. I look forwards to this day and am grateful that it is within my sight. He thinks it’s either celiac disease or wheat intolerance.

New Healthy 01/19/15 – 01/26/15

Standard

So, it’s been awhile since my diet change announcement. I have been busy with my new diet changes, shopping, cooking and all the fun stuff. I have been keeping track of everything I eat to see what takes and what doesn’t. It’s been an interesting journey and I have learned a lot. Looking forward to continuing this, feeling good and sharing this with you along the way. If you want to skip through the food portion just look for the stars and those will be my thoughts. Enjoy!

01/19/2015

– GF cereal, vanilla almond milk, coconut flakes, raisins, walnuts

– honey lemon water

– banana

– chick pea rice dish

– some sprite and ginger-ale

– homemade popcorn

– pineapple

** Feel good today, so thankful and grateful

–          GF cereal, blueberries, vanilla almond milk, walnuts, raisins, coconut flakes

–          Banana

–          Rice

–          Water

** I am always grateful, but especially these last two days not being ill. I always knew that diet could be a part of it but I always loved my food and I was afraid to change that. It was hard to make this decision, to give up everything I know, everything that’s familiar for everything that’s different and unfamiliar. I know that even the first day doing this, nothing but good could come of it. Change is always hard. I think my biggest struggle with it is that being a vegetarian who’s without a gallbladder I already have to be conscious of a lot of places I go or things I eat. I ask about ingredients, look at labels, ask people to change their gloves, watch what people touch and how they use their utensils and what their utensils touch. It’s a never ending watch and paying close attention to EVERYTHING! I feel annoying and I feel annoyed myself. By changing my diet even more I was frustrated that I would have to pay more attention then I already do or be even pickier and annoying. Walking into stores and seeing all the junk and sweets in the aisles I just realize I can’t eat anything, so it doesn’t even matter lol. I know this is good, I know this is right. I believe in it and am anxious to get/be better.

** When Mary suggested that I may be allergic to wheat and gluten I was super upset. “Give me cancer, give me ulcers, etc. But please don’t take away everything I love. I already feel like sh*t and now you want to take that away, the foods I enjoy. Can’t I just have that?!?!” Was my thinking. (A little dramatic, I know) We had the convo over pho dinner. I was telling her I can skydive, I can do some crazy and scary things, but changing my diet terrified me sooooo much! It seemed ridiculous to herm so many people she knows is already doing it. She lives in Cali, it’s like “a thing”. As I continue on this journey I am realizing there’s so much more to it.

There’s the idea of change that I spoke about last time, but there’s more emotional responses coming to the surface. You don’t realize how attached you are to things until you take them away or try to change them. I was so hurt and upset by her reaction to me not wanting to change my diet and how terrifying I thought it was. She was a little insensitive yes, but at the same time I believe I was trying to get out of it and she wasn’t letting me. I know she believe in me and just wants me to be healthy and feel good. I also believe in myself and believe I have the power to do great things. Sometimes it just takes some hard love for that little push. So I thought to myself it can’t do much more harm then what I’m feeling right now. The next day I made a facebook status and asked my friends for support as well to follow me on my journey. I feel like doing something like this alone is the most difficult way to accomplish it and hold fast to your goals. That night Mary and I went grocery shopping for everything organic and what/gluten free. It’s only been 3 days, but I finally have some relief from pain. For me, one full day without pain feels like a miracle. Looking forward to feeling good for a week or even a few! For now… one day at a time.

** At a restaurant that I get to see everything that they do. They are using the same utensils to flip the French toast as they do for the ham. When I asked that they make sure that doesn’t happen with my food, the waitress went to the manager and the manager went to the cook. When my order came up they then yelled, “this is the order”. It’s kind of like ‘this is the one to spit in’. On the plus side, by asking them to make sure that didn’t happen I got advised that the potatoes are fried in the same oil as the meat. Then I got offered fruit instead. I just don’t understand why they can’t make sure not to cross contaminate no matter how small. Make it a standard? Isn’t it the way it’s supposed to be? I do have to say when I ate meat and didn’t have to pay attention  to anything, I really didn’t find it a big deal. I also wasn’t working for the public and my grill wasn’t in front of a customer. I personally would never be able to work with food like that under such scrutiny.

In my last blog entry I talked about not wanting to be annoying. My personality, I really don’t like to be fussed over. For example when I meet someones family and they find out I’m a veggie it’s fuss fuss and going out of their way. With my kind of diet restrictions now, I really can’t help it much. Unless I never go out.. Sometimes watching and knowing what they do or how they do it makes me feel like I don’t want to eat out anyways.

** Did my big grocery shop. Feels good to support local and small business’. Cost $130 but I feel it was worth it. I’M WORTH IT! Got a lot of staples and started everything fresh and new. It feels good to be able to eat freely and know you won’t be sick afterwards. To know that the products that you’re eating and supporting are promoting your health. They believe in good, wholesome, clean products free from chemicals and the monopoly of it all. People who believe in doing the right thing and only want the best for you.

** My newest challenge is jealousy. I see people with cups of coffee and breakfast sandwiches on the go. It’s so easy for them, so convenient. It’s something I used to be able to do, but no longer can. I remember how easy it was if I was running late and couldn’t have breakfast at home, I would just grab a scone and a latte. I packed my cereal because I was running late with my milk in a mason jar. I can’t believe I did that … me! On the flip side I know that if I did buy things that other people were eating I would end up very sick. All the stuff that’s in “convenient” food is sooooo bad for you and I know that. But it hasn’t stopped the yearning of wanting to just go buy a muffin or a scone. Instead all I can eat is what I’ve packed. Eventually I’ll get used to it. But the memory of convenience is so fresh and I’m reminded of everyone around me with bagels.

  • Side note: This reminds me of high school when everyone would go to subway for lunch but I could never afford it so I had my packed lunch.
  • How I feel: Really good!! Honestly better then I’ve felt in a long time.

–          GF cereal, vanilla almond milk

New diet announcement

Standard

This was posted as a Facebook status, but I have decided not to adjust it and leave it as is.

Announcement: Hey everyone! As most of you know I have been very sick over the past year with multiple emerg visits, clinic visits, a surgery etc. the main issue is extreme nausea and vomiting with abdominal pains. I was also getting gallbladder attacks until that got removed. So sometimes I’ll go a week or so without pain and sometimes I’ll have it for weeks on end, or I might have one episode a day for like an hour. I have an endoscopy consultation at the end of the month and will know more after the procedure. I love that I have my friends from near and far knowing what’s going on so I can share my story and maybe help others, it’s also nice to have the support and kindness you guys bring. For the past two weeks I have been experiencing extreme pain every time I eat. And am also nauseas before I eat, so I don’t want to eat in the first place. Being sick for my whole Cali visit I have made the decision to change my diet COMPLETELY. I have found I am only okay when I eat nothing processed, which means a strict diet of only fruits and veggies with eggs and maybe some wheat and gluten free food (which I will be introducing as well). I will be taking information from various resources and sharing my journey with you through my blog, which I will share on here. I always get told I’m the healthiest eater people know but it seems I can be healthier and I’d like to share that with you or anyone you know that may be interested. I know this is super lengthy and if you read the whole thing, kudos! I look forward to starting this project in the upcoming weeks while sharing my struggles, success’ and opportunities. Thank you for all that you do!

Love, Rachel
